Researchers analyzing 4,793 person-nights found that days with more plant-forward eating were followed by more deep and REM sleep, less light sleep and a lower average nocturnal heart rate.
Higher fibre density showed some of the clearest links: deep sleep rose 0.59 percentage points, REM increased 0.76 points, light sleep fell 1.35 points and mean overnight heart rate dropped about 1.14 beats per minute.
Plant-food diversity and higher phytochemical intake were also tied to a more restorative sleep profile, including a 0.62-point REM gain, a 1.00-point light-sleep decline and a 0.93 bpm lower nighttime heart rate.
Heavier evening meals produced a different trade-off, adding 7.7 minutes of total sleep time but raising nocturnal heart rate by 0.73 bpm, suggesting longer sleep did not necessarily mean better physiological recovery.
The Nature Health study used real-time food logs, wearables and lagged statistical analysis to reduce confounding, but it remains observational and cannot prove causation.
